How to Make Gorgonzola Pizza With Pear and Red Onion

Ingredients (Makes one 12-inch pizza)

  • 1 sheet of pizza dough (or make your own pizza dough)
  • 1 cup mozzarella cheese, grated
  • 3oz (100g) Gorgonzola cheese (we used the ‘dolce’ variety)
  • ¼ red onion, thinly sliced
  • 1 ripe pear, thinly sliced
  • 2 tablespoons olive oil
  • Salt and cracked black pepper (to taste)
  • 1 handful of rocket

Equipment Needed

  • Large cutting board and kitchen knife
  • Pizza wheel cutter (optional)
  • Small basting brush
  • Mesh baking tray and parchment paper (baking paper)

Instructions

  • Preheat oven to 475°F/250°C
  • Roll out the pizza dough onto a mesh baking tray. (See information below if making your own dough from scratch).
  • Baste pizza base with some olive oil then bake base for 3 minutes, or until just golden. Remove the base from oven.
  • Brush the base with some more olive oil, then sprinkle with the mozzarella cheese, then add the red onion, pear slices, and gorgonzola.
  • Return to oven and bake for 8 minutes or until crust is browned and cheeses are melted.
  • Sprinkle the rocket over evenly, then serve.

Cooking Notes

  • Substitute other types of blue cheese for gorgonzola.
  • Substitute Mozzarella for your favorite type of cheese (gouda, cheddar, and edam all work well!).
  • Add some crushed walnuts after baking for some extra crunch and texture.
  • Check your pizza base packet for timing suggestions, since some will be thicker and take longer (or thinner and less).
  • See below for a homemade pizza dough recipe.

Homemade Pizza Dough or Store Bought?

Which is better? Well, it’s totally a personal choice there. On one side, store-bought pizza dough is available in almost any supermarket. It’s cheap and saves time and many will argue it is ultimately what you put on the topping that really matters.

Then of course, homemade pizza dough can be made to suit personal tastes, and is likely to be healthier than store-bought dough (mainly due to sodium levels, so check the packaging if this is a concern to you).

For this recipe, we opted for store-bought dough, simply as it is more convenient. If you prefer to make your own homemade pizza dough, allow a few extra hours.

Homemade pizza dough recipe

Ingredients:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 cup warm water (about 110°F or 43°C)
  • 1 teaspoon sugar
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt (optional)

Instructions:

  • Activate the yeast: In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5-10 minutes, or until it becomes frothy. This indicates that the yeast is active and ready to use.
  • Mix the dough: In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour and pour in the activated yeast mixture and olive oil. Stir with a wooden spoon or a mixer with a dough hook attachment until the dough starts to come together.
  • Knead the dough: Transfer the dough to a lightly floured surface and knead it for about 5-7 minutes, or until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour, one tablespoon at a time, as needed.
  • First rise: Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm, draft-free place for about 1 to 1.5 hours, or until it has doubled in size.
  • Dust a little flour on a clean surface and roll out and shape your pizza dough.

Which Gorgonzola Should I Use on This Pizza?

Gorgonzola is an Italian blue cheese made from cow’s milk and comes with a pungent, tangy flavor. It’s a popular ingredient in Italian cuisine and is used in a variety of dishes to add depth and richness of flavor.

There are two main types of Gorgonzola cheese:

Gorgonzola Dolce

This is the milder and creamier version of Gorgonzola that is used for this pizza recipe. It has a sweeter and less intense flavor due to its shorter aging period. Gorgonzola Dolce is often used in salads, pasta dishes, or as a spread on bread and crackers.

Gorgonzola Piccante

This is the stronger and more aged version of Gorgonzola. It has a sharper, more intense flavor with a crumbly texture. Gorgonzola Piccante is often used in sauces for pasta, risotto, or as a topping for steaks and burgers.
