Brush the base with some more olive oil, then sprinkle with the mozzarella cheese, then add the red onion, pear slices, and gorgonzola.
1 cup mozzarella cheese, 3 oz 100g Gorgonzola cheese (we used the ‘dolce’ variety), ¼ red onion, 1 ripe pear, Salt and cracked black pepper
Return to oven and bake for 8 minutes or until crust is browned and cheeses are melted.
Sprinkle the rocket evenly over the top and serve.
Cooking Notes
- Substitute other types of blue cheese for gorgonzola.
- Substitute Mozzarella for your favorite type of cheese (gouda, cheddar, and edam all work well!).
- Add some crushed walnuts after baking for some extra crunch and texture.
- Check your pizza base packet for timing suggestions, since some will be thicker and take longer (or thinner and less).
