  • 2 boneless, skinless chicken breasts
  • 2 lemons (zested and juiced)
  • 2 garlic cloves (minced)
  • 2 tbsp Extra Virgin olive oil

  • Salt and pepper (to taste)

Instructions:

  1. In a bowl, mix lemon zest, lemon juice, garlic, olive oil, oregano, salt, and pepper.
  2. Score chicken breast about an half an inch (1 cm) deep and 1 inch (2cm) apart. 
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked.

Serving suggestions:

  • Scoring the chicken breast meat on one side helps the marinade penetrate the meat and it also helps the breast meat cook more evenly. 
  • Aim for a 3:1 oil-to-acid ratio for the marinade, it will make the chicken marinade more flavorful.
