How to Make Healthy Zucchini Carrot Bread
Ingredients
- 1 zucchini, grated (400g / 14oz.)
- 1 large carrot, grated (200g / 7oz.)
- 2 large eggs
- ¼ cup Extra virgin olive oil
- 1½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp garlic powder
- 1/2 cup shredded mozzarella cheese
- Fresh parsley (optional)
- Salt and pepper (to taste)
- ½ lemon (zested)

- Grate carrot and zucchini and squeeze off excess liquid.
- In a large bowl, whisk together the eggs with a pinch of seasoning.
