- 1 zucchini grated (400g / 14oz.)
- 1 large carrot grated (200g / 7oz.)
- 2 large eggs
- ¼ cup Extra virgin olive oil
- 1½ cups all-purpose flour or use gluten-free flour
- 1 tsp baking powder
- 1 tsp garlic powder
- 1/2 cup shredded mozzarella cheese
- Fresh parsley optional
- Salt and pepper to taste
- ½ lemon zested
Preheat oven to 180°C / 350°F
Grate carrot and zucchini and squeeze off excess liquid.

In a large bowl, whisk together the eggs with a pinch of seasoning.

Add the other ingredients and gently fold the mixture until combined, this should take 2-3 minutes by hand (do not use an electric mixer for this step).
¼ cup Extra virgin olive oil, 1½ cups all-purpose flour, 1 tsp baking powder, 1 tsp garlic powder, 1/2 cup shredded mozzarella cheese, Fresh parsley, ½ lemon
Line an 8×4 inch loaf pan with parchment paper.
Transfer this mixture to your loaf pan and spread out evenly.
Bake for 45 minutes or until a toothpick comes out clean.
Remove from oven and allow it to rest for 15 minutes before removing from the pan. It should just lift out with the parchment paper.
Slice into 1-inch pieces and serve while still warm.
