Salad dressing
- 2 tablespoons of extra-virgin olive oil
- 3 tablespoons of lemon juice around 1 lemon
- 1 tablespoon of sherry vinegar
- 1 garlic clove minced
- ½ teaspoon of salt
For the salad
- 5 cups of watermelon skin removed and cubed (around ¼ of a 10 inch watermelon)
- 1 cup of cucumber diced
- ½ red onion sliced fine
- ½ cup of diced and crumbled feta cheese
- ½ cup of black olives without seeds, sliced
- ⅓ cup of basil leaves
- Sea salt
- Cracked black pepper
Step 1 - Prepare the salad dressing
In a small bowl, whisk together the olive oil, lemon juice, sherry vinegar, garlic, and salt.

Step 2 - Prepare the salad
Arrange the cubed watermelon, cucumber, and sliced red onion on a large plate or platter.

Sprinkle some feta and sliced black olives on top.
