Ingredients
  

Salad dressing

  • 2 tablespoons of extra-virgin olive oil
  • 3 tablespoons of lemon juice around 1 lemon
  • 1 tablespoon of sherry vinegar
  • 1 garlic clove minced
  • ½ teaspoon of salt

For the salad

  • 5 cups of watermelon skin removed and cubed (around ¼ of a 10 inch watermelon)
  • 1 cup of cucumber diced
  • ½ red onion sliced fine
  • ½ cup of diced and crumbled feta cheese
  • ½ cup of black olives without seeds, sliced
  • cup of basil leaves
  • Sea salt
  • Cracked black pepper

Instructions
 

Step 1 - Prepare the salad dressing

  • In a small bowl, whisk together the olive oil, lemon juice, sherry vinegar, garlic, and salt.
    2 tablespoons of extra-virgin olive oil, 3 tablespoons of lemon juice, 1 tablespoon of sherry vinegar, 1 garlic clove, ½ teaspoon of salt

Step 2 - Prepare the salad

  • Arrange the cubed watermelon, cucumber, and sliced red onion on a large plate or platter.
