Veggie Lasagna - Gluten-Free Comfort Food

This veggie lasagna recipe is a delicious and comforting meal that’s loaded with layers of fresh vegetables, creamy ricotta, rich marinara sauce, and gooey melted cheese—all 100% gluten-free.

For the noodles:
- Use Gluten-Free Lasagna Noodles available online or in most supermarkets.
- OR use thinly sliced zucchini eggplant, or sweet potatoes as a noodle substitute.
For the filling:
- 1 container 15 oz Ricotta Cheese (or mascarpone cheese)
- 1 ½ cups shredded mozzarella
- ½ cup grated Parmesan cheese
- 1 tsp Garlic Powder
- 1 tsp Organic Italian Seasoning
- Salt & pepper to taste
- For the veggie layer:
- 1 zucchini sliced into thin strips (optional)
- 1 red bell pepper diced
- 1 cup spinach chopped
- 1 onion diced
- 2 cloves garlic minced
- 1 tsp Garlic Powder
- 1 tsp Dried Oregano
- Extra Virgin Olive Oil
For the sauce:
- 3-4 cups gluten-free marinara sauce check labels for hidden gluten or make your own (check out our super easy gluten-free marinara sauce recipe here).
Step 1 - Sauté the veggies
Heat olive oil in a pan, and cook onion & garlic for 2 minutes. Add zucchini, bell pepper, and spinach, cooking until softened (around 8 minutes). Set aside for use later.

Step 2 - Mix the ricotta filling (optional)
In a bowl, combine ricotta, parmesan, garlic powder, Italian seasoning, salt & pepper.
1 container, 1 ½ cups shredded mozzarella, ½ cup grated Parmesan cheese, 1 tsp Garlic Powder, 1 tsp Organic Italian Seasoning, Salt & pepper to taste
Step 3 - Assemble the lasagna
Preheat oven to 375°F (190°C).
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Use Gluten-Free Lasagna Noodles, OR use thinly sliced zucchini
Add a layer of gluten-free noodles (or veggie slices).
Spread marinara sauce mixture, then sautéed veggies, and sprinkle some mozzarella.
3-4 cups gluten-free marinara sauce
Repeat the layers until all ingredients are used, ending with sauce & cheese on top.
