Spanish Padron Peppers (Pimientos de Padrón) are a quick and easy vegan-friendly tapas recipe that takes just 5 minutes to make with only 3 ingredients.

Equipment

  • Cast iron skillet or frying pan
  • Cooking tongs
  • Serving plate

Ingredients
  

  • 500 g/17oz. Padron peppers
  • 4 tablespoons of extra virgin olive oil
  • A pinch of coarse sea salt

Instructions
 

  • Heat oil in a skillet on medium-high heat.
    4 tablespoons of extra virgin olive oil
  • Once the oil is hot, add the peppers whole and rotate the peppers continuously. You will see the skin begin to brown and blister.

  • Once the peppers are blistered on all sides, remove them from the heat and add to a serving plate.
  • Season with salt and serve!
    A pinch of coarse sea salt

Notes

Cooking tips: 

  • If the oil starts to smoke, it is too hot, remove it from the heat immediately.
  • Be sure to turn the peppers regularly so they cook and blister on all sides.
  • Do not cover the pan or skillet while cooking, the peppers will soften and may go mushy. 
  • If the peppers bulge with air while cooking, use a sharp knife to pop each pepper and release the air. 
  • Coarse-flaked sea salt or Pink Himalayan salt work best for this recipe. Both are healthier than standard table salt. 
  • You can also use normal olive oil instead of extra virgin olive oil (EVOO) for a more affordable option if EVOO’s really expensive where you are right now.
