5-Minute Summer Peach & Feta Salad

Sunshine in a bowl, this easy 5-minute summer peach & feta salad is the perfect way to savor the sweet, juicy flavors of summer. Using deliciously sweet, ripe peaches, creamy feta, crisp red onion, and fragrant basil, every bite is a refreshing balance of sweet, salty, and tangy.

Equipment

  • Small jar with lid (for the dressing) or a Small wooden bowl
  • Chef Knife
  • Wooden Cutting Board
  • Salad Serving spoons
  • Lemon Juicer (optional)

Ingredients
  

For the peach salad

  • 1 ripe peach
  • ½ red onion sliced fine
  • 1 cup salad greens
  • 3.5 oz. 100g Feta Cheese Crumbles, 6 oz
  • Small handful of fresh basil

For the salad dressing

  • Fresh lemon juice and zest from 1 lemon
  • Extra Virgin Olive Oil
  • Salt and pepper to taste

Instructions
 

Step 1 - Make the salad dressing

  • Add the dressing ingredients to a small jar with a lid.
    Fresh lemon juice, Extra Virgin Olive Oil, Salt and pepper
  • Shake for 30 seconds or until ingredients are combined.

Step 2 - Make the Peach salad

  • Lay a bed of salad greens then layer with some sliced red onion on top.
    1 cup salad greens, ½ red onion
  • Cut a peach into thin slices around ½ cm thick (⅛ th inch). Add them to the salad.
    1 ripe peach
  • Crumble the feta over the top of the salad and garnish with fresh basil.
    3.5 oz. 100g Feta Cheese Crumbles, 6 oz, Small handful of fresh basil

Step 3 - Add Dressing and serve

  • Drizzle salad dressing over the salad right before serving.

Cooking Tips: 

Choose peaches that are ripe, but still firm:
Look for fruit that’s sweet and juicy, yet firm enough to slice cleanly. Gently press near the stem—there should be slight give, but no softness or mushiness.
 
Reduce the sharpness of the red onion:
Mellow the red onion intensity and sharpness by slicing it fine and then submerging it into some iced water for 5 minutes. 
 
Try different cheeses:
We love the salty flavors of the feta cheese, but other cheeses also work well. Use a blue cheese such as gorgonzola for some extra tang, or use a soft goat’s cheese to really add a tangy kick to this salad. 
 
Grilled peaches:
This is a great summer salad recipe that works well as a side dish alongside your favorite barbecued meats or veg, and while you’ve got the grill hot, add the peaches for 2 minutes per side for some smoky flavor and goodness!
